Another LME Question

Morning All,

I know I have seen this asked before, but I haven't been able to dig the answer up this morning so I need the collective wisdom.

I have about 15 Lbs of LME from NB that I ordered last fall. Due to tons of issues it is still in my basement. I was going to do two batches this weekend if everthing goes well. I have already put together my shopping list to replace my mini-mash grains, because they were already ground.

THe LME has been sealed in 1/2 gallon plastic milk containers and stored on the shelf in my basement. Around 64 degrees year round. Other than if I find mold under the cap, if the LME tastes good it should be fine, right?

Fresh ingredients are best. Would you buy the LME from your LHBS if it were marked as being a year old? Buy some new extract. Why take a chance? It ain't expensive.

The biggest issue you're going to run into is the LME having darkened due to Maillard reactions. There could be some slight off flavors, but probably nothing too dramatic. Go ahead and use it, I say - waste not, want not!
