Only on our second batch and we have just begun the 60 minute boil...adding the hops phase...we just remembered to smack the package of yeast...is it going to rise in time for us to pitch it in 60 mins or will we need to wait...

Can we transfer the wort into our primary fermentation bucket and wait or are we screwed!!

Help

I would transfer to your primary fermentor.....get the wort to pitching temps....and when the smack pack has swollen....pour it it.....I have pitched as much as 48 hours after brewing.....and all turned out fine!!!!

The pack does not need to be swollen for it to ferment your batch. Smacking only helps to activate it a bit faster. I would pitch the pack and get the yeast to working on their job. Next time, try making a starter and it will ensure a healthy, fast start.
