Serving a draft beer

Hello beer lovers,

Anybody knows how to serve correctly a draft beer?

I read than you should have a quarter of foam, three quarter of beer. Is that the right ratio?
When I look at some photo on brewery websites, it seems the head of foam is much thinner!

25% seems high, IMO.
I like seeing about an inch or so, give or take, but it will depend on the style.

I like 1 inch or 2 of foam too.
I think also it depends from the beer.

I've heard that the foam also protects the beer against air and avoid the taste is altered by oxidation. So I think 1 inch is a minimum.

I would agree that it's completely style dependent. Anywhere between 5 & 25mm.

I disagree with the oxidation theory.

Maybe it needs time for oxidation. If we drink a beer within 5 minutes, there is no risk to alter the taste. But if you open a bottle of beer and drink it a couple of hours later, the taste will definitely be altered.

I found on internet this flash game that is suppose to teach you how to serve a draft beer with the correct ratio of beer and foam.
