2 gallons in a 5 gal fermenter?

Technically a cider question, but deal with it.

FInally got some local cider w/o preservatives, and i want to ZYMURGYTIZE! it. Unfortunately i only have 2 gallons of cider, and my smallest carboy is 5 gallons. Will there be any downside to pitching 2 gallons in the 5 gallon fermenter? Will this be detrimental to a good fermentation?

Are you worried about too much head space? I think you'll be fine.

If you were concerned, you could purge the fermenter with CO2 first, but that's probably not necessary.

If you are using it for primary fermentation I wouldn't sweat it. You are looking to introduce a large amount of O2 into your must anyway once fermentation begins it will force out the O2 and fill the head space with CO2. You'll be fine. You will however want to purge your secondary with CO2 if you are using the same size carboy.

One time I was siphoning from kettle to primary and I was using one of those buckets with a spigot on the bottom. I started siphoning and suddenly had to go to the bathroom. I never had problems just leaving the siphon go and walking away before. When I came back there was about 2 gallons in the fermentor and 3 gallons on the floor! The spigot was open the whole time! Instead of throwing the whole thing away I just pitched the yeast into the 2 gallons and let it go. Turned out to be one of the best beers I had ever made at the time. I was so pissed that I spilled 3 gallons of it on the floor.

You know, after the numerous homebrewing posts that I have read where the brewer walked away from his equipment during a boil or transfer - not ONE of them has been positive.... wierd, huh?
