My incomplete fermentation of Tripel is now almost 2-months into its intro to 2-bottles of Orval dregs. Smells like Orval and I now see some small bubble spots on its surface. Taste #2 in 1-week (or this weekend if I cannot wait.)
Planning on about a 6-month aging.

I thought you were going to say it was buttery like popcorn. Nice work on the Orval!

Noted. Bad name maybe and GREAT name for a beer full o' diacetyl. This was an f' up during the mash and did not finish out (post of my woes elsewhere on the forum) and I re-attacked the 10+ gallons with a VERY active WLP530 on top of the WLP 530 fermented batch and Orval dregs into the WLP510 batch....the WLP530 batch is not dry enough to be a good Tripel, but more like a heavy Belgian Golden Strong to me with a lot of champagne notes plus body and mouthfeel....very tasty.

Update--
10/1 - the brett is taking over! Phenomenal musty, dank, funky aroma. There's still some excessive sweetness that is now a bit unpleasant that lingers in the after-taste. I think it just needs time to let the brett work its magic. I think this is going to be a good one....hopefully the introduction of brett into my fermenter and to my glass wine thief will not spread. That's the Brett+2-months update.
