G'day fellas /time in fermenter

Hey fellas
So I'm on a 5 week on 5 week off roster

And I'm finding it hard to ferment and bottle in the same break

Is there something I'm doing wrong is there some thing I can do ??

So far I brew a beer in week 2 and by week 5 I hve to bottle my beer before I go to work this leaves my beer 3 weeks to ferment
Before I ha e to bottle As i am the only person proficient to bottle
I have. Tight bottling schedule but I know they need to stay in the fermenter for longer for perfection

My question is

How long can i leave. Ferment in in the temp controlled fridge before bottling

I don't have access to kegs as yet but bottling is my option

I listen to BN very day for 3 years. So I know my brewing technique

3 weeks in the fermenter is not a big deal. You can relax - nothing bad will happen.

In 5 gallon fermenters I've pushed into triple digits. Bit of oxygenation in the buckets, no autolysis flavors. In glass, they were perfectly fine. Even in a bucket, I wouldn't worry about them at all before week 6.

One of these days I'm going to get around to my autolysis experiment. 5 gallon batch in a carboy, I'll start taking samples around 150 days & see how long I can go before getting autolysis based off flavors.

I've done 3.5 months in my living room during the middle of summer with temps up in the high 80s and been fine. Can't do that with every beer, but I think if you did a batch week 4 (so you're on hand during initial ferment), then let it cruise till you get back, you'd be JUST FINE.

BTW, if you get another fermenter, you can do 2 at the same time.

That's what I tried telling her, but it just ended with me sleeping on the couch.
