I do this all the time without problems. I bring the wort to 190 and walk away. I've gone as long as 8 hours without issues.

I actually had to do this 7 days ago. After mashing out, I did NOT bring the wort up to 180. I transferred everything back to the 1gallon jugs the distilled water came in. Two days later, I did the boil. Nothing smelled or tasted off. I did notice that during fermentation that the CO2 coming out of the blow off tube has an extra gassy/farty/yeasty smell. I tasted a sample and it has a flavor that kind of tastes like a lager. I Just transfered to a secondary and threw in an ounce of Amarillo hops.
Fermenting: Single Hop, Single Malt IPA (2-Row/Simcoe)
