Single infusion Mash for 9min @150F. I did another reading. Made sure the sample was at 60F. Used an instant read probe thermometer (LOVE this thing). My FG is actually 1.010.

that sounds better but is that a typo on the mash time?

1.010 & 150 both sound pretty reasonable to me for style

But 9 min is super fast! My brew day would be soooo much faster!

That's because you have to fool the enzymes into thinking they're in a boot camp. Scream at the mashtun a lot & ignore the looks from the neighbors. What do they know, you just might have maggots in that cooler.

I had to read it again a couple times. My brain was adding that missing 0 for me.

Drink it. And like someone already posted, it will be at it's best when about 16 ounces are left in the keg...

Just an update for anyone curious about this recipe. I personally feel that the flavors were at their best at week 3. After that they dropped off a bit. Oddly enough they started to get better around week 5. It's all gone now so I can't report any further.
