Centennial Hops for Arrogant Bastard?

I've got a lot of Centennial hops vacuum packed in the freezer. The AA is 11.4.

For the last batch of Arrogant Bastard, the recipe called for Chinook, nearly four ounces.

What are your thoughts of Centennial as a replacement for Chinook in Arrogant Bastard? I'd like to use what I have.

I also have a bunch of Cascade and Perle.

I'm looking for "ball park" not direct clone.

It will probably taste very good with centennial, but I don't know if it will be in the ball park of Arrogant Bastard. Had a pretty fresh 22oz bomber. Definitely convinced chinook is the signature hop and flavor in the beer. Centennials and Chinook are very different flavor and aroma profiles. Even more convinced that 35 grams at 90m and 60g at 20 min WP with Chinook is VERY close. Need to rebrew his soon....

Hoser - my last (and first) batch of A.B. was 90% 2-row and 10% Special B. I followed the CYBI recipe but came in at 1.070 due to improved efficiency.

I plan on doing this again with a 5.5 gallon target but the same grain bill, .5 gallon less to account for lower evaporation from the keggle.

It was planned for 6 gallons but I took it to 5.5.

I did four ounces of Chinook as scheduled. It was damned good.

You're suggesting 1.2 oz @ 90, 60 and 20?

No. 35g at 90 minutes with 60g at 0min with a 20 minute WP

Gotcha, only 90 minute and zero minute additions.

I may round up to simplify things.

What are your thoughts on Aromatic Malt as part of the grist?

Why do you need to round up 35g and 60g to simplify things? Essentially, that is 1 1/4 oz and 2 1/8oz? Any scale should be able to measure that.

I wouldn't use aromatic, but it is your beer. If you are wanting a tasty, hoppy beer, it will be fine. I wouldn't use more than 5% of your grist. If you are trying to "clone" AB or get in the "ball park," you don't need it. 90% 2-row, 10% Special B or C150L.

What IBU are you getting out of the 1.250 @ 90 and 2.125 @ flameout? Using the Rager formula in Beersmith, I get 54 IBU.

The original CYBI came it at 99 IBU.

I am calculating the flameout addition as a 20 minute hop addition which comes out to 96IBUs using Rager. You will still get isomeratization of alpha acids and bitterness contributions from hops when doing a WP/hopstand.
