Awesome! I'm really interested in doing a dark saison, especially after having the Dark Heather Saison from New Belgium last year. Would you mind sharing your dark recipe??

Haven't tried the 3711. Been using the WYeast 3424 & its a bitch...its tough being patient!

How about bottle conditioning? I have yet to do it with my two thus far, but am leaning more and more to finishing with some Brett. Any success stories out there?

Go for it. I used my house blend (the dregs of every sour/funky beer I buy in a regularly renewed starter) to bottle condition a table strength saison (3711 for primary) and it turned out great even if somewhat out of style.

As for brewing saisons: a friend and I are in a perpetual saison "arms race" where we try to one up each other by riffing on the same basic recipe over and over. Lots of fun and a great style to experiment with since it's so open to interpretation. If you don't have it already "Farmhouse Ales" has some great info.

Definitely my favorite family of beers to brew and drink. If you need some more ideas check out the babblebelt.com homebrew forum and just search for saison. A lot of those guys like to play with funk too. Or you can check out my blog link below, I've got a lot of saison recipes I've done on there. Just do saison in the search, I don't think I have them all tagged.

Got It! Its a great book, wish it had some more specifics in terms of recipes, but its helped me understand the style I love much much more.

+1 to always having some kind of saison going in my house. I currently have a winter dark saison (16 SRM) inspired by the Odonata session which I pitched a pack of Brett B. and Fantome dregs into. It has been aging in the keg for 4 mos now in my cellar. It was 7.4% ABV upon racking.

Did you add any priming sugar when you pitched the Brett, or did you just rack with a few points left to go?
