Yeast for Munich dark

Thu Oct 30, 2008 12:18 am

I am going to brew a dark Munich lager in the near future, and I am wondering what yeast to use. My options (due to the ease of availability) are White Labs WLP830 or WLP838. I guess both would work just fine, but which one would fit the style best? I am currently leaning towards the latter, since it might provide a bit more of a malt backbone to the beer, but since I have never used any of the two before I don't really know. Any tips?

I've used the 838 for an Octoberfest, a couple Helles, and a Dort and I was pleased with all. The 2 Helles were brewed one after the other, repitching the yeast. The second wasn't as good as the first, but that probably was due to poor technique. I like the 838 and will use it again, but will be trying the 830 next. It's supposed to be drier / crisper.

I think either one will work with a dark lager.
