Thinking about making some root beer for my nephews

I'm planning on making some root beer to take to my young nephews this Christmas. Anybody have a good recipe or any tips for doing this? I plan on putting it into 12 oz brown bottles. I'm pretty sure I'm going to get some extract.

If you are using extract, especially if this is your first time doing root beer, just follow the directions on the instruction sheet that comes with it. Mix your sugar and extract together along with your yeast. The directions call for ordinary bread yeast which works fine since it is only for carbonation. Make sure your bottles are sanitized. Fill them and let them sit at room temperature for about a week. From that point on keep them refrigerated, otherwise you will have bottle bombs. :eek

The best way to tell when they are fully carbonated is to fill one plastic soft drink bottle with the root beer. Every couple days give it a squeeze. Once it is hard, it's time to refrigerate the batch.

oddly enough i was listening to an old session where someone is asking about making root beer. dr scott seemed pretty adamant about force carbing...as using yeast "never tastes right". not sure which one ... it was the episode 1-7-07 somewhere towards the end.

I do agree with doc on that. I almost always force carb mine. I have a keg and a picnic tap line dedicated for root beer.

do you need anything special to bottle after force carbonating in a keg? I do not have a beer gun or counter pressure filler.

but as bugeater mentioned...you should keep that keg separate...or at make sure you clean it after you make rootbeer. for the same reason you recondition in the first place.

I've made root beer before and force carbed it, but it's quite a hassle keeping it at a separate pressure, etc.

I've been considering buying one of those SodaStream deals (or just using a carbonator cap), making my own syrup from the homebrew extracts, and then just carbing one bottle at a time.
