Go for it. I used my house blend (the dregs of every sour/funky beer I buy in a regularly renewed starter) to bottle condition a table strength saison (3711 for primary) and it turned out great even if somewhat out of style.
As for brewing saisons: a friend and I are in a perpetual saison "arms race" where we try to one up each other by riffing on the same basic recipe over and over. Lots of fun and a great style to experiment with since it's so open to interpretation. If you don't have it already "Farmhouse Ales" has some great info.
