Need a good Kolsch Recipe

First club competition in a while. The winner will get his recipe brewed at one of the local breweries. 5 Barrel Batch.

Anyone have a good recipe?

Never brewed a Kolsch before, not a 'lawnmower' beer fan. I Like big beers.

Seems to be a simple beer from the grain and hop bill. German Pils, Munich, a single hop Spalt at ealry in the boil only.

Yes it is, can't go wrong with it. Make sure to use the Kolsch yeast.

I tried that one once and has some pretty serious issues with temperature control, including a 15 degree spike. Needless to say it didn't come out very well, but it wasn't because of a bad recipe, bad fermentation control on my part. I have been meaning to try it again, but haven't been able to get a fermentation fridge yet, and weather here in the southeast can fluctuate very quickly.

A friend of mine makes a really tasty and simple extract Kolsch. It's just 7 pounds of Pilsen Light DME, but with a lot of that(about 5 pounds) done as a late addition with only about 15 minuites left in the boil. I'm still not sure what the benefit of the late addition is - someone else can probably explain that better than me. About 1 oz. Tradition or Hersbrucker for 60 min., and about 3/4 oz. of the same hops for 30 min. Use White Labs Kolsch (WLP029) and ferment at 60-65 degrees. It is also helpful to cold condition a Kolsch in the bottles for at least a couple weeks after carbonating. I have never made this one myself, but have drank it many times and it is easy drinking and crisp.
