You got that right and I got to try the real thing at NHC this year. Now I know what it is supposed to taste like...although my previous attempts were not bad.

Just took a hydrometer sample. 1.014 which is pretty good. Tasting it there was an astringency to it that I can only assume is from tannins. There are two places I think it could have come from. First is from my batch sparge where I was shooting for 165-170 and it may have been more 171-172 degrees. I didn't think that it would draw too manny tannins though. Secondly I had a very vigorous boil and boils off about 2 gallons.

Any thoughts? Will it mellow out any over time?

What did your efficiency hit at? Generally that grainy taste comes with 90%+ efficiency. It may mellow out over time.
On tap:
Secondary: Experimental IPA
Primary: IIPA, (Half of which is being poured at a beerfest!)

Somewhere between 75 and 80. Probably closer to 80 but I haven't done the exact calculations yet.
